Pr Finley's research interests include development of new low calorie lipids and carbohydrates and their biological effects, natural antioxidants and ingredients that reduce cardiovascular inflammation. 

In addition research on effective food delivery systems at the intersection of food science, nutrition and culinary arts.

Pr Finley is currently Professor & Head Professor and Head of Department of Food Science, University of Louisiana, Baton-Rouge, USA.
